While our family enjoys eating out at some special restaurants, we love eating at home and having the same great flavors even more.  Especially when that means that we can have four meals that are delicious for the price of what only one would cost in a restaurant.

This  Shrimp Carbonara dish is one a family favorite.  Not only is it fairly simple to make, but it also creates a rich and delicious restaurant style dish that impresses guests and family alike.  This is not even remotely healthy so I won’t pretend to tell you otherwise.  It is definitely a dish I prefer to make only on rare occasions due to all of the rich cream, cheese and bacon included.  You can lighten it up some if you desire but I recommend making it as is for the full effect.

RECIPE: Shrimp Carbonara

  • 25-30 Jumbo Shrimp {Shells removed and cleaned}
  • 2 cloves crushed garlic
  • ¼ Cup Extra Virgin Olive Oil
  • 4 slices Bacon
  • 1 Small Jar Roasted Red Bell Peppers {drained}
  • 1 Small Red Onion Sliced Thin
  • ½ Stick Unsalted Butter
  • 2 Cups Heavy Whipping Cream
  • 2 Cups Milk
  • 2 Tablespoons Flour
  • ¼ Cup Grated Romano Cheese
  • ½ Cup Grated Parmesan Cheese
  • ½ Cup Grated Mozzarella Cheese
  • ¼ Cup Thinly Sliced Fresh Basil
  • ⅛ Cup Fresh Oregano Chopped
  • 1 Teaspoon Freshly Ground Black Pepper
  • 1 large package preferred pasta {spaghetti or fettuccini}
  1. Cook pasta according to package directions, drain and set aside.
  2. In large skillet, render bacon. Remove from pan, drain and crumble. Set aside.
  3. Drain bacon grease from skillet leaving 2-3 tablespoons in skillet.
  4. Cook red onion in bacon grease on medium heat until tender.
  5. Add in olive oil, garlic and cleaned shrimp and cook 4-5 minutes or until just done. Remove shrimp and onions from pan and set aside.
  6. Add flour and butter to pan making a thin roux.
  7. Gradually stir in cream, milk and cheeses stirring constantly.
  8. Sauce will begin to thicken.
  9. After 5-6 minutes, add back shrimp and onions, roasted peppers and fresh herbs.
  10. Stir until just heated through.
  11. Pour over pasta, mix and serve with a touch of freshly grated cheese and ground pepper on top.
